MEATLESS MONDAYS

We're taking on the Meatless Monday challenge to do our bit for the environment

Method & Ingredients

Roughly chop the onion, celery, garlic, ginger and sweet potato from part 1.  Add to a hot pan with a litle olive oil. Fry on a medium heat until they start to colour.

Turn down to a medium heat and add all te spices from Part 2, along with a pinch of salt, being careful to keep stirring to prevent the curry from catching.  Cook for 22-4 minutes.  Add the ingredients from part 3 and stir well. Bring to the boil, then turn down and simmer for 30 minutes, until the vegetables are tender. Blend until smooth using a food processor, then transfer back to the pan and keep warm.

Cube and then roast the butternut from Part 4 in a little olive oil in the oven at 160 for 25 minutes or until tender and golden.

Wash and finely chop the spinach and coriander and mix together.

To serve, stir the roasted butternut, spinach, coriander and blackbeans through the blended sauce.

Serve with rice and/or naan bread and mango chutney, and garnish with a sprinkle of onion seeds and coriander leaf.
